Sausage Egg Muffins These muffins are low in calories, high in protein, and easy to make. Best of all, they taste great reheated and my kids love them.
sauté any veggies you have on hand (I used spinach, onion, and bell pepper).
add in ground sausage, ham, or shredded cheese – (optional – I threw in a little sausage)
Beat 8-10 eggs and or egg whites together in a big bowl, mix in veggies and any seasonings you want (I just did salt and pepper)
Pour egg mixture in a greased muffin tin and bake at 350 for 15-20 minutes.
