This salad makes a healthy and fresh lunch or light dinner. It can be whipped up in less than 10 minutes if you have cooked chicken on hand.
Feel free to sub any fruit of your choice, nuts or seeds you have on hand, favorite herbs, and veggies that would make a tasty addition.
Salad Ingredients
- 2 cups cooked chicken – can use canned or rotisserie chicken
- 1/2 cup diced strawberries or red grapes
- Leaf lettuce or butter lettuce
- Chopped green onion
- 1/4 cup diced red onion
- 1/4 cup diced celery
- 1/4 cup toasted sliced almonds, pumpkin, or sunflower seeds
- 1–2 Tbsp. chopped fresh basil
- Feta or blue cheese (optional)
Dressing Ingredients:
- 1/4 cup light mayonnaise or Greek yogurt
- 2 Tbsp. lemon juice
- 1 tsp. poppy seeds
- Salt & pepper to taste
Directions:
- Combine the chicken, strawberries, onion, celery, toasted almonds, and basil in a medium bowl.
- To toast almonds: Place almonds in a small pan over medium heat or in an air fryer. Toast until slightly browned.
- Combine the mayonnaise or Greek yogurt, lemon juice, and poppy seeds in a small bowl. Gently stir into the chicken mixture—salt and pepper to taste.
