This super easy and tasty recipe. The oats will keep for at least 4 days if stored in an airtight container in the refrigerator.
½ cup plain nonfat Greek yogurt
1/3 cup pumpkin purée
¼ cup oats (any oats will work)
1-2 tbsp of your favorite sweetener
¼ tsp ground cinnamon
Crushed pecans for topping (optional)
Add all the ingredients to a mason jar or plastic container with a tight-fitting lid. Stir until thoroughly combined. Cover and refrigerate for 8 hours or overnight. Serve cold.
