These pancakes are light, fluffy, delicious, and made with only a few ingredients. Add them to your weekend meal prep and enjoy a healthy breakfast all week.
Ingredients:
1-1.5 cup old-fashioned oats
1/2 cup low-fat cottage cheese
Two eggs
Splash of milk or water
1 tsp cinnamon
1 tbsp baking powder
1/2 tsp vanilla
Variations:
Add banana, flax seed, chocolate chips, or berries to the batter.
Directions:
Combine all ingredients (except berries or chocolate chips—hand mix those in) in a blender and blend until smooth.
Heat pan on low-medium heat.
Spray pan with cooking spray.
Pour batter onto the pan and cook for approximately two minutes per side.
Top with maple syrup, nut butter, butter, fresh fruit, or nuts, and enjoy!
