Hamburger Vegetable Stew

This hearty beef and veggie stew is the ultimate cozy comfort in a bowl—packed with nourishing vegetables and rich flavor. It’s a simple, one-pot meal that’s healthy, satisfying, and even kid-approved. Finish it with cheese, crackers, or a dollop of Greek yogurt, and you’ve got the perfect dish for chilly days or easy weeknight dinners

1-3 lbs ground beef
1 yellow onion 🧅
1 green bell pepper 🫑 (can sub for yellow or orange)
6 minced garlic cloves
1 large sweet potato or a few regular potatoes 🥔
2-3 sliced carrots 🥕
2-3 sliced ribs of celery
2 14-oz fire-roasted tomatoes
1 Qt. Beef broth
1.5 tbsp Italian seasoning
1 tsp sea salt
1/2 tsp black pepper
8 oz fresh or frozen green beans
1 can of corn (optional)

Directions:
1. Brown ground beef, onion, and garlic, then drain.
2. Add the rest of the ingredients and let them simmer.
3. If you prefer the stew to be thinner, add more broth.
4. If using frozen green beans, add them 30 minutes before eating.

🥣 Top it with cheese, crushed crackers, or chips. You can also mix in a scoop of Greek yogurt or sour cream.
