Fudge Protein Brownies

I’ve been craving something sweet all week, so Nash and I made these healthy brownies packed with protein and fiber. They were easy to make and so good!

Ingredients:

1 1/2 cups black beans (1 15-oz can drained and rinsed)

3 tbsp cocoa powder

7 tbsp chocolate protein powder (I used chocolate from Bad Athletics). You can use flour if you don’t have any protein powder.

1/4 tsp salt

1/4 cup maple syrup, agave, or honey (I used honey)

pinch of stevia, or 2 tbsp sugar of choice

3.5 tbsp coconut oil, or your choice of oil

1 tbsp vanilla extract

1/2 tsp baking powder

A handful of chocolate chips (optional)

A handful of walnuts or pecans (optional)

Directions:

Put all ingredients in a food processor or blender, except chocolate chips and walnuts, and blend until smooth. Pour the batter into a greased baking dish and sprinkle with chocolate chips and walnuts. Bake at 350 for 15- 20 minutes and let cool.

They will look a little undercooked, but that’s ok. Let cool and refrigerate overnight.

Unfortunately, my brownies didn’t make it to the refrigerator, so I’m not sure how they taste when they are completely cooled! 😉
