I’ve been craving something sweet all week, so Nash and I made these “Healthy brownies” today. It was so easy and they were so good!
Please note, that yes, these brownies are more nutrient dense than your normal brownie, but just because they are considered “healthy” doesn’t mean they have less calories than than a brownie made with flour, sugar and butter.
By the time you add up the beans, honey and coconut calories, I’m willing to bet the calories are about the same.
1 1/2 cups black beans (1 15-oz can, drained and rinsed)
3 tbsp cocoa powder
7 tbsp chocolate protein powder (I used chocolate). If you don’t have any protein powder, you can just use flour.
1/4 tsp salt
1/4 cup maple syrup, agave, or honey (I used honey)
pinch of stevia, or 2 tbsp sugar of choice
3.5 tbsp coconut oil, or any type of oil
1 tbsp vanilla extract
1/2 tsp baking powder
Handful of chocolate chips ? (optional) However, this wasn’t an option for me!
Handful of walnuts (optional)
Put all ingredients in a food processor or blender, except chocolate chips and walnuts and blend until smooth. In a greased baking dish pour in batter and sprinkle with chocolate chips and walnuts. Bake at 350 for 15- 20 minutes and let cool.
They will look a little undercooked, but that’s ok. Let cool and refrigerate overnight.
My brownies unfortunates didn’t make it to the refrigerator, so I’m not sure how they taste when they are completely cooled??
