Chicken Wild Rice Soup


This is a great recipe to make on those chilly snowy or rainy nights.

You can make it in the crockpot or on your stove top. ⁣


1-2 lbs boneless chicken breasts uncooked⁣

4 cups chicken broth⁣

1 cup wild rice, uncooked⁣

4 garlic cloves, minced⁣

1 yellow onion, diced⁣

4 carrots, peeled and diced⁣

2 celery stalk, diced ⁣

2 tsp. dried rosemary⁣

1 tsp. dried thyme⁣

2 bay leaves⁣

1 cup mushrooms, thinly sliced⁣

1-2 cups half and half (optional – but I added it) ?⁣

¼ cup chopped fresh parsley⁣

Lets Cook!

-Season chicken with salt and pepper. Place chicken in slow cooker or pot⁣

-Stir in chicken broth, wild rice, garlic, onion, carrots, celery, thyme, rosemary and bay leaves.⁣

-Cover and cook on low heat for 6-8 hours in slower cooker or on stove top until all ingredients are cooked. ⁣

-Add mushrooms and half and half the last 30 minutes of cooking time.⁣

-Shred chicken using two forks.⁣

– Serve and garnish with fresh parsley, thyme and shredded or shaved parmesan, if desired.
