This is a great recipe to make on those chilly snowy or rainy nights.
You can make it in the crockpot or on your stove top.
Ingredients:
1-2 lbs boneless chicken breasts uncooked
4 cups chicken broth
1 cup wild rice, uncooked
4 garlic cloves, minced
1 yellow onion, diced
4 carrots, peeled and diced
2 celery stalk, diced
2 tsp. dried rosemary
1 tsp. dried thyme
2 bay leaves
1 cup mushrooms, thinly sliced
1-2 cups half and half (optional – but I added it) ?
¼ cup chopped fresh parsley
Lets Cook!
-Season chicken with salt and pepper. Place chicken in slow cooker or pot
-Stir in chicken broth, wild rice, garlic, onion, carrots, celery, thyme, rosemary and bay leaves.
-Cover and cook on low heat for 6-8 hours in slower cooker or on stove top until all ingredients are cooked.
-Add mushrooms and half and half the last 30 minutes of cooking time.
-Shred chicken using two forks.
– Serve and garnish with fresh parsley, thyme and shredded or shaved parmesan, if desired.
