Sweet Potato Cauliflower Soup
I made this creamy soup last night. It was simple and easy.
1 onion diced (I used a sweet onion)
3 garlic cloves (minced)
1/2 tsp sage
1/2 tsp paprika
1/2 tsp turmeric
2 medium sweet potatoes -chopped
2-3 Cups cauliflower – chopped
4 cups vegetable or chicken broth
13.5 oz can coconut milk (you can use any milk)
salt & pepper (to taste)
Sauté the diced onion in 1/4 cup broth – about 7-8 minutes.
Add the spices, garlic, sweet potato, cauliflower, and remaining broth. Bring to a boil, then let simmer for 20 minutes until the vegetable are fork tender.
Using an immersion blender or blender. Purée the soup until smooth and creamy. Add the coconut milk and stir well. Taste and adjust seasonings, adding salt and pepper, if necessary.
